Succession Fermentory produces sour & farmhouse ales using locally grown & sourced ingredients. They will be bringing the following beers:

—Gaudium (4.9%) – Tart Farmhouse Wheat Ale brewed with @deercreekmalt Pilsner malt, pale oats, & raw wheat from our neighbors. Locally grown Trifoliate orange, coriander & ginger were added to the Koelschip, imparting the beer with notes of citrus and spice.

—Baiya (4.8%) – American wild ale brewed with 30% honey from stellalou farm as a source of fermentable sugars. Conditioned with foraged wild chamomile & cultivated German chamomile, also from the farm. The finished beer was blended with a portion of our last batch of millefleur, featuring lemon balm, anise hyssop & rakau hops. This lively & dynamic ale leads with expressions of pineapple & tropical fruit and finishes with a gentle & refreshing citrus acidity.

—Willow Wolf – Hoppy farmhouse ale brewed with Pilsner, Wheat & Oat malt. Dry-hopped with PA grown centennial, cascade & Rakau hops & citra hops from Yakima Valley. Classic saison yeast character with citrusy and resinous hop character. Cooled in the koelschip overnight.

—Saison Prunus (6.4%) – Blend of young & old saisons from our solera program. Brewed with Pilsner, rye malt & raw wheat. Fermented with our house culture. Conditioned on foraged wild American plum (Prunus americana).

—Barbarus Sambucus (4.0%) – Dry Brett stout matured for 9 months in second use bourbon barrel & finished in freshly emptied burgundy barrel. Over the course of its maturation, we added elderberry juice, hickory syrup, & dark candied sugar.

—Nebulae (4.0%) – Mixed culture Berliner Weisse. Cooled in the koelschip overnight. Lightly tart, lemon & peach notes with a farmhouse character.
